"In the style of the cavalry." A sauce made with cream, Parmesan cheese, walnuts and eggs and served with pasta.
"In the style of guitar." This refers to egg pasta in Abruzzo and Marche cut on a special instrument called a chitarra which shapes into long, rectangular, square-sided, strands. A sheet of pasta is laid across lines of stretched wire, rather like an egg slicer. A rolling pin is then passed over the pasta and the wires achieve the cut.
A sauce of mushrooms, peas, cream and ham. I have also seen it described as a sauce made with tomatoes, oregano and mozzarella and have eaten it as crostini with a sauce of fresh tomatoes, celery and oregano. I suspect it is simply local fresh ingredients turned into a sauce and spread on crostini or served with pasta?
