"In the style of Capri." This usually indicates a sauce made with tomatoes, olive oil, mozzarella and basil.
A dish from Rome with ham, eggs, black pepper, cream and pasta. It is said to originate from Abruzzo where charcoal burners traditionally stay in the woods for long periods with supplies of spaghetti, ham, eggs, cheese and oil. This can mean simply cooked over coals.
"In the style of the cart driver or trucker." This must depend on the trucker or cart driver as I have seen several different descriptions of what this might be. These seem to come from Lazio and include 1) a sauce of tuna, mushrooms, pancetta and tomato served with pasta, 2) pasta with hot peppers and pork or 3) spaghetti with a sauce of anchovies, capers, fried parsley, garlic and onions. In Basilicata apparently this sauce is referred to as "alla trainiera" and has ginger added.
