A semisoft blue cheese made with cow’s milk. It is a Cambazola-like cheese with a downy, white round made on a farm by Pat and Joan Hyland, Ballacola, Co Laios, Ireland. This cheese is made with whole milk and contains 45-60% fat. It weighs 2 kg (4½ lb). Affinage is 3 to 10 weeks.
A hard cheese made with cow’s milk and flavoured with onions or chives. It is made by D John Davidge, Ilchester Cheese Company, Ilchester, Somerset. This cheese is made with whole milk and contains 48% fat (dry). The curds are pressed. This is a Double Gloucester-like cheese.
Prime, black Scottish polled (hornless) beef cattle which produce well-flavoured, tender meat. Aberdeen Angus is also a cocktail.
A cocktail consisting of 60 ml (2 fl oz) Scotch whisky, 30 ml (1 fl oz) Drambuie, 1 tablespoon honey, 2 tablespoons lime juice. Stir the scotch, honey and lime juice in a mug until well blended. Warm the Drambuie in a ladle over a low flame. Ignite it and pour the burning liquid into the mug. Stir vigorously and drink immediately. Aberdeen Angus also means a breed of beef.
A log or tub of fresh cheese made with cow’s milk and enriched with cream. It is a fresh white cheese similar to cottage cheese, but stronger. It is made in Scotland by Susannah Stone of Highland Fine Cheeses in Ross and Cromarty with raw, skimmed milk. It is made without rennet so is suitable for vegetarians. It weighs 125 g (4½ oz). Sometimes it contains caraway seeds.
