"Raw meat." A dish from Piedmont of strips of veal or beef marinated in oil and lemon, not otherwise cooked and served as a salad, sometimes with the addition of mushrooms and truffles.
"Raw meat (in the style of Alba)." Carne all'albese is a classic of Alba in Piedmont. It is a dish of thinly sliced raw beef of the best quality, scattered with shavings of white truffle and best served with rocket salad. In the absence of truffle it may be served with shavings of Parmesan cheese.
Salt beef from Piedmont made by salting chunks of beef which are then conserved in brine for months.
