A pale pink prawn (US: shrimp) with a pronounced red beak found in the deep waters of the Mediterranean.
Gobies or possibly tiny atherines. Minute, silver fish similar to whitebait and deep fried in the same way. These days chanquetes refers to any small fish cooked in this way and nicknamed sea spaghetti.
Corkwing. A type of wrasse, a small, marine fish (up to 15 cm (1 ft) in length) which is good in soups. The largest is the peacock wrasse.
The flesh of the lower jaw, ganglions that grow in the throat of the hake, greatly prized in Spain, and shaped like an arrow-head. They sound almost like tonsils.
