Bulgur or cracked wheat is hulled and parboiled whole wheat grain including the wheat germ. It is steamed, set out to dry and then broken into pieces. It has a nutty flavour and is used in salads such as tabbouleh, pilaf and kibbeh from the Middle East. In North America this is available as #1 = fine; #2 = medium; #3 = coarse.
