Alaria is a seaweed similar to wakame but found in the North Atlantic. It has a mild flavour and is usually dried and then soaked before use in soups.
Alum. An astringent mineral salt formerly used as a preservative in pickling and as a firming and crisping agent.
Beef olives. Thin slices of beef stuffed, rolled and braised. May also be stuffed aubergines.
Grouper. The most common species, this is reddish or yellowish brown particularly popular in North Africa. Being firm and dense, and relatively bone-free, makes it good for poaching or grilling. Good cold.
