"Chicken under a brick." Spatchcocked chicken cooked on a grill and pressed with a tile or brick while it is cooking (that is the mattone). The flatness of the bird enables it to be cooked more evenly.
"Chicken with ham". Chicken cooked with finely chopped prosciutto in a sauce of tomatoes and white wine.
"Chicken cooked in red wine." Chicken stewed in red wine, usually with mushrooms and onions and garlic and herbs.
