Chicken baked in a tegame probably with a little white wine, garlic and rosemary.

"Boiled chicken." Usually simmered or boiled rather than boiled.

"Chicken with peppers." Red peppers roasted and cooked with jointed chicken in white wine with tomatoes, garlic and onions.

"Chicken with rosemary". Chicken dish flavoured with rosemary,

"Chicken with dried mushrooms". Chicken stewed with dried mushrooms, usually in the liquid in which the mushrooms were soaked.

"Fried chicken." Usually dipped in egg and breadcrumbs.

"Fried chicken in the style of Florence." Chicken pieces dipped in batter and deep-fried and served with a quarter of lemon.
