A dish from Sardinia of several meats and birds, boar, beef, veal, pigeon, chicken, goat, lamb, all stewed with tomatoes, onions, garlic, and aromatic vegetables such as carrots and celery, probably spiced with cloves.
Fan mussel. A shellfish which grows up to 40 cm (16") long but which otherwise has the appearance of a large, slightly elongated mussel. The adductor muscle is edible.
A Tuscan plain sponge cake or amaretti flavoured with pine nuts. May be served with Vin Santo as a dessert.
Pinot Blanc. A white grape variety used for some light red or rosé wines. It is grown predominantly in the north east of the country. May be mixed with Chardonnay.
Pinot Gris. A white grape variety used for some light red or rosé wines. It is grown predominantly in the north east of the country and is more highly regarded than Pinot Bianco, despite producing wines of similar quality.
