This is a pasta from Sardinia which consists of a thin sheet of pasta dough cut into irregular shapes with a toothed wheel and then hung to dry. It is then boiled in water or broth and served with ragù of some kind it's almost a kind of Sardinian lasagne..
Alchermes. A deep red, brandy-based liqueur coloured with cochineal and flavoured with herbs. It is often used for flavouring and colouring desserts. One of the ingredients of zuppa inglesi.
"In the style of Bari" in Puglia. This might indicate a pasta dish of spaghetti or linguine served with a sauce of turnip tops, onions and garlic stewed in olive oil with tomato purée and basil.
