Mango powder. A very sour flavouring agent with a slightly fruit flavour made from dried under-ripe mangoes, rather similar to tamarind in cooking.

Spanish or chub mackerel with pinkish, oily flesh, large eyes and spotted skin. It has a lot of fat so it is best grilled, and fresh.
"Mackerel in the style of Boulon." Poached, sliced mackerel served hot or cold with mussels and a rich butter sauce.
