"Egg liqueur." A Dutch egg yolk and brandy liqueur, sweet, yellow and thick, served with a small spoon. This is used, with fizzy lemonade, to make a snowball. Its name is a shortened form of 'Lawyer's drink' - advocaatenborrel.

Egg sauce. This is a cold sauce for fish made with chopped eggs, capers, vinegar or lemon and clarified butter.

Danish custard. A sweet custard sauce similar to English custard and containing almonds. It may also, like English custard, be made with a thicker consistency and poured into a mould and set and served cold as a complement to smoked ell, smoked salmon and prawns (US: shrimp) in cold buffet lunches or open sandwiches. It is also commonly served with marinated halibut (US: turbot) as a much enjoyed starter in Denmark.
