A sweet wine made from apples. Unlike cider it is still and it has a higher alcohol content. Cider is a relatively new phenomenon in Denmark. There are no traditional Danish brands or based on the ciders of England, France and Germany.

The noble rot. The fungus which develops on grapes in certain areas, causing them to shrivel and wither, concentrating the sugar and flavour. Grapes so infected produce a very fine, and expensive, wines such as Sauternes.
