"Rice with the bullfighter's cape." Rice flavoured with saffron and salt cod, tomato, garlic and chickpeas (US: garbanzo beans) garnished with red peppers.
"Rice with a crust." A paella-like dish of rice cooked with any of meat, rabbit, chicken, meatballs, black pudding (US: blood sausage)., chorizo or chickpeas (US: garbanzo beans), with white wine in any combination. The dish is sealed with an egg crust and finished in the oven au gratin.
"Black rice." Rice blackened with squid ink and cooked with vegetables, a variety of seafood and squid.
"Rice in the style of Mallorca." I have seen this described as rice with sofrito, seafood and sobrasada, a hot sausage with paprika, or as rice with pigeon, mussels, seafood and sobrasada.
