Scaly tooth mushroom or tiled hydnum, an edible fungus with a slightly bitter aftertaste.

Dotterel. A type of small, chunky plover found on stony heights and tundra.

fjällripa

Ptarmigan. For much of the year the ptarmigan is simlar to the red or willow grouse, with a touch of white on the wings. In winter both sexes become pure white (as does the willow grouse). However, its habitiat is quite different as it prefers barren, stony mountain slopes, usually higher up than the willow grouse.

Char(r) usually refers to the Arctic char, an uncommon freshwater fish of the same family as salmon, trout and related to grayling and the vendace or powan. It is found in rivers and lakes of northern Europe, north western United States and Canada and in the Great Lakes. They are migratory fish, like salmon and trout. They have a steely blue-grey back with salmon-pink speckles on the sides and a red underbelly. They have sweet firm flesh which varies from white to pink, dependent upon its own diet, and with good flavour, some say better than trout, being something like a cross between trout and salmon.

Weever. A fish with venomous spine above its gills. Alec, of Padstow Angling Centre tells me that the greater weever is one of the finest fishes to eat. This is a place that knows its fish, so I look forward to trying it as soon as I can.

Elderberry. A tree which produces berries that are used for making syrups and wines, while the flowers are used for wine or cordials or may be dipped in batter and fried. Elderflowers are also a traditional accompaniment to gooseberries in crumbles. In France the flowers may also be used to flavour a confection. Folklore has it that elderberries gathered on St John's Eve (23rd June) protect against witchcraft. I am not sure I have ever seen an elderberry ripe for picking so early in the year. The dried berries can be used as a substitute for raisins.

Flank of beef. A cut which is used for braising, stewing and boiling. It runs along the back part of the animal's belly.
