Caper. The pickled flower buds of the white-flowering, low-growing caper bush which grows around the Mediterranean on rock faces exposed to the sun. They are usually pickled in vinegar or salt. They are particularly popular in sauces with fish but also served in other savoury dishes.

A disc of semihard cheese made with sheep's milk, similar to Serra. It has a smooth, white paste and a thin dry rind with patches of bloom and a slightly smoky flavour. This cheese is has 55% fat (dry)/30% (total). The curds are uncooked. It may be found in the following dimensions: 8 cm (3") diameter x 4 cm (1½") deep, weighing 220 g (7-8 oz).
