A feast celebrated around the slaughter of a pig when all the edible parts are made ready for use. In Italy this means pretty much the entire beast. Sausages and black pudding (US: blood sausage).s are prepared, joints and hams are dealt with and the offal (US: organ meat) is assembled. Parts which will not store are eaten as part of the festival.
Porbeagle or mackerel shark. A member of the shark family common in the Atlantic. It grows to 4 meters (13 ft) in length. It has good flavour and texture and is grilled in the form of steaks.
Alexanders or black lovage. A celery-flavoured plant. Stems can be prepared as a vegetable and served with butter and black pepper.
