A Milanese name for wild hop shoots. They have a short season and are often used in soups and, famously, in risotto. Known in the Veneto as brucelando, bruscandoli, cime di luppoli or luppoli. Known in Rome as lupari.
Moro del Logudoro from Sardinia is a small wheel of grating cheese made with whole sheep's milk, The wheel has convex sides with a white to yellow paste and a brown to black rind. The curds of this commercially-produced cheese are uncooked and pressed. It weighs 3 – 3.5 kg (6 lb 8 oz – 7 lb 9 oz). flavour of a young cheese, after up to two months affinage, is quite mild and makes a good table cheese. As it ages it becomes more piquant and is good for grating.

A few websites suggest that lollo rosso, a frilly red lettuce, was named after Gina Lollobrigida, or even her panties. One even goes so far as to say that Raymond Blanc refuses to include it on his menu because of this. Lollo Rosso has a heavily ruffled leaf with a light crunchy texture with a distinctive red hue.

A region of central northern Italy, bordering Switzerland along its northern edge. It includes Sondrio, Varese, Como, Bergamo, Brescia, Milan, Mantua, Cremona and Pavia. Agriculture is important. Maize, wheat, rice and wine are produced and mulberries are grown for sericulture. Dairy produce is the main speciality of the region so butter is used in preference to olive oil, cream is frequently used in sauces and many cheeses are available, including Bitto, Gorgonzola, Robiola, Taleggio and Bel Paese. The rice is used in making the great risotti of the area. You will more often find polenta or rice than pasta, and when you find pasta it is likely to be fresh rather than dried. Rice and polenta dishes are likely to be served with meat or vegetable mixtures and then topped with melted butter or cheese. The cold weather encourages the production of warming dishes like minestrone and osso buco which, at their best, are sublime. Lake fish are found in Lakes Como, Maggiore and Garda, some of them rarely seen elsewhere, such as missoltini. In autumn (US: fall), mushrooms, truffles and chestnuts may be found in the mountains, while staples include potatoes, cabbages and pumpkins.
