Moro del Logudoro from Sardinia is a small wheel of grating cheese made with whole sheep's milk, The wheel has convex sides with a white to yellow paste and a brown to black rind. The curds of this commercially-produced cheese are uncooked and pressed. It weighs 3 – 3.5 kg (6 lb 8 oz – 7 lb 9 oz). flavour of a young cheese, after up to two months affinage, is quite mild and makes a good table cheese. As it ages it becomes more piquant and is good for grating.
