linguine

"Little tongues." Narrow, flat pasta noodles, but long like spaghetti, from southern Italy. Linguine is often served with sea food, particularly clams, and is the traditional accompaniment for pesto. The equivalent pasta in the north is trenette.

linguine alla romana

"Linguine in the style of Rome." I have seen various descriptions of this. Linguine alla romana in the US is likely to be linguine with a sauce containing chicken. In Rome the sauce is more likely to contain puntarelle, butter beans (US: navy beans), garlic, with salted anchovies to give it a savoury hit. Mind you, I have also seen descriptions of this as a sauce with shellfish such as crab.
