"Flowers of milk." A Mozzarella-like cheese from Campania made with cow's milk often used in pizza-maknig in Naples where Mozzarella itself is thought of as too expensive for use in pizzas. Firo di Latte has a rather rubbery texture and a flavour of milk, eaten fresh.
"Flower of Sardinia." A soft, creamy, slightly salted sheep's milk cheese made from whey in Sardinia and sometimes called caciofiore. In fact, both names apply to many cheeses, both soft and firm, though this one is generally aged for three months for use as a table cheese, or for longer if it is to be used for grating. It is a cooked cheese, at a low heat. If it is factory-made it is likely to have a cow's milk component. (DOC).
Squash flower, usually stuffed with a mixture of breadcrumbs and garlic or dipped in batter and fried. They should be washed under running water first as insects are attracted to the wonderful yellow of these flowers.
"Courgette flowers in the style of Padua." Courgette (US: zucchini) flowers dipped in batter and deep fried.
