"Flowers of milk." A Mozzarella-like cheese from Campania made with cow's milk often used in pizza-maknig in Naples where Mozzarella itself is thought of as too expensive for use in pizzas. Firo di Latte has a rather rubbery texture and a flavour of milk, eaten fresh.
