Indian shad or hilsa, a favoured freshwater fish which migrates into the rivers of the Bay of Bengal.
Bael fruit; a close relative of the citrus. The fruit is about the size of, and has the appearance of a greyish-yellow orange with a thin woody rind. The floury pulp is pale orange in colour and has numerous seeds. Dried slices are soaked and boiled and the resulting liquid sweetened and drunk. Used for medicinal purposes.
Chinese celery, the seed of which is used as well as the leaves. Asian celery is smaller and darker than European celery. It is also stronger, so it is not used raw but is used for flavouring stocks and soups. It is sometimes thought of as celery or parsley.
Indian plum or ber. A plum-like fruit which is a small, sweet, reddish-black berry which fruits during the monsoon. The term is also used to describe a type of pantua, a confection which is fried to resemble this berry. There are sweet versions (narkel kul) and sour versions (topa kul). The latter are used to make pickles and chutneys.
