Star anise. Chinese anise. A seed from a tree of the magnolia family which has a flavour reminiscent of liquorice. Stronger than aniseed, it is used in the same way.
Bael fruit; a close relative of the citrus. The fruit is about the size of, and has the appearance of a greyish-yellow orange with a thin woody rind. The floury pulp is pale orange in colour and has numerous seeds. Dried slices are soaked and boiled and the resulting liquid sweetened and drunk. Used for medicinal purposes.
Millet. Pearl millet. After rice and wheat this is the most important grain crop of India. It is used to make flour which is often used in the making of poppadums. Two types of millet are available, bulrush or bajra bajra (pearl millet - Pennisetum typhoideum) and finger millet (Eleusine coracana).
