"Brjanski salad." A salad of roast venison and calf's head cut into strips with sliced gherkins (US: dill pickles), raw apples and hard boiled eggs. It is served with mustard mayonnaise.
"Café Anglais salad." A salad of cooked morel mushrooms, cooled, truffles and shrimps mixed with mayonnaise.
"Chambéry salad." A large tomato stuffed with lobster, salmon, artichoke hearts, gherkins (US: dill pickles), lettuce and mayonnaise.
"Castle salad." A salad of cooked frog's legs, chiffonade of lettuce and watercress with a vinaigrette or mayonnaise.
