A flat-shelled variety of native oyster, cultivated in their own home beds near Arcachon in south western France.
Grenadier or rat-tail; a long, tapering, ash grey marine fish found up to 90 cm (36") long, deep in the Atlantic. Not a very attractive fish and difficult to skin and fillet, so good in soups.
A thick, small slice of veal which may be square or triangular. It is the name for a tournedos when applied to veal rather than beef. It may also be applied to other meats or poultry but not commonly.
