"Mushroom of China." Shiitake mushrooms, which may be grilled or used in soups and stews. In Russia they are frequently pickled.
King trumpet mushroom. It may be eaten either fresh or dried, roasted or baked but the flavour is not highly regarded and the flesh is chewy.
"Paris mushroom", so named because mushrooms were extensively cultivated in vicinity of Paris during the 19th century.
Horse mushroom. Edible, and very delicious, but easily mistaken for other less palatable or even poisonous mushrooms.
Man on horseback. A type of pleasant edible mushroom of yellowish colour with which some cases of poisoning have been recorded.
The fairy ring mushroom with white flesh and a pleasing taste. These dry well and have good flavour but must be cooked first.
