Finishing touch to garbure. Red or white wine poured into the last of the soup after the bread and vegetables have been eaten. It is mixed with the remnants and drunk in south western and central France.
Mushroom and general term for edible fungi. It is also a wooden pestle used for rubbing purées through a drum sieve.
Parasol mushroom. Good baked with butter and garlic, or fried.
The fairy ring mushroom with white flesh and a pleasing taste. These dry well and have good flavour but must be cooked first.
