The Cos or romaine lettuce is a long, thin lettuce with quite dark green, crisp, canoe-shaped leaves.
Costmary is a herb with strong scent of minty camphor, related to feverfew. It is a bit too powerful to be much use in the kitchen, but can sometimes be substituted for mint. Traditionally it is used to clear and preserve ale during brewing.
A semihard, unpasteurised, Jersey cow’s milk,vegetarian farmhouse cheese with a soft crust and creamy texture. The flavour is delicate but with a slightly sharp edge. A blue-veined version is available. It has been made at Barnard's Castle in Co. Durham since the 17th Century. It was modelled on Wensleydale but is moister and creamier.
