Syrup made from cornflour (US: corn starch), available in light and dark varieties. It is often used in desserts and preserves as it is clear and of smooth texture. Not as sweet as ordinary cane sugar. Golden syrup can be used as an alternative.

Coronation chicken

Coronation chicken was a dish devised by Rosemary Hume for the Coronation of Queen Elizabeth II in 1952. Apparently the inspiration for this dish was Queen Adelaide, the wife of William IV (uncle of Queen Victoria). She particularly enjoyed sandwiches spread with apricot butter and curry and filled with chicken in a cream sauce.

A name for the coral trout, a deep coral pink grouper which makes for good eating. The flesh is sweet, firm and, surprisingly, milky white, like a cross between sea bass and turbot. Very good catch!

Corsica is the anglicised name for Corse, a French Mediterranean island. It consists of two departments, Corse du Sud and Haute-Corse. Red, white and rosé wines made in Corsica are known as Vin de Corse, with the added names of Patrimonio, Coteaux de Cap Corse, Calvi, (Coteaux d’) Ajaccio, Figari-Porto-Vecchio and Sartène.

A variety of large, all-purpose, shiny yellow apple flushed with dark red skin and with juicy, crisp, slightly tart, white flesh, also used for cider. It retains its whiteness after cutting, making it good for adding to punches or salads. It also freezes well. This apple was raised in the United States in 1898 by SA Beach of New York State Agricultural Experimental Station and is a cross between Ben Davis and McIntosh which was introduced commercially in 1915. It was awarded the Silver Wilder Medal in 1923. This is a late-season apple which is harvested from early October in South-East England, is stored and is at its best from October to January. In the United States this is a mid-season apple picked from mid-September to early October.
