Norway pout. A coastal fish, similar to poor cod, shaped like an elongated triangle with a copper-coloured back and silvery sides and belly. It is about 20-30 cm (8-12 inches) long. It has a short barbel on its lower jaw, long thin pelvic fins and two abdominal fins connected by a membrane, The flesh is lean, but rather flavourless and has many bones. It deteriorates rapidly, and so should be prepared very quickly.
Danish pastry rolled out and cut into 8 cm (3") squares. Custard cream and jam (US: jelly) are placed in the centre and the corners turned lightly in towards the centre before they are cooked.
Greencracked brittlegill. A variety of wild mushroom which, as its name implies, is a sort of olive green with darker green markings and with creamy brittle gills. Most brittlegills resemble other ones that are inedible and some will cause gastric problems. You can normally detect what type it is by the flavour. A tiny tasting will immediately reveal whether or not it is edible, but it is worth spitting it out immediately if you detect a bitter taste.
Pintail duck. A widely-distributed, and very elegant, species of duck, of which the male has the tail of a pointed shape, the two middle feathers being longer than the rest.
