Forkbeard. A greyish or brownish fish with reddish fins from Spanish waters. It is usually fried, but this must be done quickly as it does not keep well.
Witch sole. A side-swimming flatfish with pinkish-purple, marbled skin, having a blunted shape similar to the sole although it is not a true sole.
Creamed shellfish made with the meats of lobster, crayfish, crabs and/or prawns cooked in stock with double cream (US: heavy cream) and brandy with cayenne and cloves. They are heated gently without boiling to prevent them from becoming tough.
Roach. A small freshwater fish similar to carp. It has many bones, which discourage most people from eating them.
Pastry shells. These could either be filled with savoury stuffings, such as creamed mushrooms or shellfish, or with custard or fruit.
