Bullhead. Miller's thumb. The bullhead is a small variety of catfish with a large head, weighing not more than 450 g (1 lb). It has firm flesh with a mild flavour. The skin must be removed before cooking as it is tough and inedible. Bullheads are versatile as they can be poached, grilled, steamed or used in soups and stews.

It can mean cream, as in the rich matter emanating from a cow thought this is most commonly known as nata; it might mean a cream or custard dessert as in crema catalana; it might indicate a cream soup or purée as in crema de pollo; it may also be a liqueur such as crema de cacao.

Crème fraîche. Thick, slightly soured cream which has the great advantage of not separating when it is boiled. It is available in low fat forms which remain good consistency, both cooked and uncooked. It is made from cream curdled by the addition of bacteria and can be made at home by adding buttermilk or yoghurt to double cream (US: heavy cream), heating to 35ºC (90ºfahrenheit) and letting stand at room temperature until thickened.

"Bavarian." A cold dessert of thick egg custard and whipped cream set in a mould, variously flavoured, often served with fruit. It is a sort of upstanding mousse, unmoulded.
