A toast. Formally (and formerly) the glass was raised to the level of the stomach. Participants then bowed to one another, their eyes meeting. The glass was raised for drinking and then lowered to the same position and another exchange of looks took place. Another bow was performed and the glasses returned to the table.

Creamed shellfish made with the meats of lobster, crayfish, crabs and/or prawns cooked in stock with double cream (US: heavy cream) and brandy with cayenne and cloves. They are heated gently without boiling to prevent them from becoming tough.
