Wild tassel hyacinth. Muscari. A wild bitter-tasting bulb found in mountainous regions, similar to an onion. It must be soaked to remove the bitterness and may be boiled or included in stews. When really young the bulbs may be used in salads.
"Lamprey in white wine." Lamprey cut into chunks and stewed in white wine with chopped onion and thyme and stock.
Offal (US: organ meat) in the form of a part of the stomach of a calf, but more thin and flat than tripe It is the leanest, firmest part of the stomach, called the abomasum. In Florence this is traditionally boiled in a broth of herbs and tomatoes, then finely cut and used as a filling for a sort of sandwich, with salsa verde. Traditionally eaten by workmen for lunch.
Dolphin fish or dorado, silver and gold and found all over the world. No relation to a dolphin. Usually made into steaks or baked.
A type of espresso coffee maker consisting of a pot which can be unscrewed in the middle, revealing a third part in the middle. The bottom is filled with water, the middle with finely ground coffee and the whole screwed back together in. Placed on a flame, the water boils, is forced up through the ground coffee and arrives in the top part of the pot as a serious blast of caffeine. Watch out, if using one, as the handle can get fantastically hot.
