Sauce. Gravy. Intingolo is found in southern Italy and is a thick sauce-cum-stew, the ingredients of which are dictated by what it will be served with. It is often served with either bread or polenta.
Aged. Mature. Refined, Developed. This can mean ripe, aged or seasoned in reference to cheese, wine or meats. It means mature when used in a complimentary way but be cautious as it can also mean stale.
Paupiettes or olives. Stuffed meat rolls. Thin slices of meat or poultry wrapped around a stuffing and braised.
