Rice fritters made by cooking rice with lots of water and letting it form to a mush. When cooled these can be rolled into balls and fried and coated with icing sugar.
"Angel's fart." Small portions of choux pastry fried in an inch depth of olive oil until the ball turns itself over in the oil. When cooled they are filled with any thick cream mixture.
A sort of cross between a pancake and an omelette with a variety of ingredients. For example, in Liguria you may find it made with sardines or anchovies. It is usually sliced like a cake and often served cold. Similar to Spanish tortilla. Like tortilla it is cooked for rather longer than the classic French omelette.
