Salad dressing
A "dressed" salad from Liguria made with tomatoes, cucumber, lettuce, celery and cardoons with olive oil, sometimes with the addition of bottarga.

Conference pear. A long, tapering pear, the skin green with brown russeting. The flesh is very juicy and sweet with a firm, sometimes grainy texture. It is an excellent all-purpose pear which keeps well.
Preserved. Candied, crystallised, especially in relation to fruit. Preserved in sugar, a bit like sugared almonds, or liqueur.
