Yoghurt. Curds. Yoghurt is used in Indian kitchens to tenderise meat and as a sour creaming agent. It can be used in either sweet or savoury dishes.
Moth bean. Sometimes called the brown lentil. A tiny pulse which, because it is small and dark, is often adulterated, so needs careful picking over.
A drink made from yoghurt and crushed ice. The natural version is called lassi namkeen and the sweetened version is known as lassi meethi.
