Brown beans
"Brown butter." Butter heated to a light brown nut colour. It is served hot.
A crusty bread roll made with rye.
Strong coffee with very little milk.
Muscovado sugar
Pine bolete or brown birch mushroom.
Portabella or chestnut mushroom.
Russula integra. A good edible mushroom with pinkish brown colour.
Grouper. The most common species, this is reddish or yellowish brown particularly popular in North Africa. Being firm and dense, and relatively bone-free, makes it good for poaching or grilling. Good cold. May also be a wreckfish.
