Bercy sauce. A sauce for grilled meats of shallots, white wine, meat glaze and butter, finished with diced blanched beef marrow and parsley. One of the classic sauces.
An area or district. Bereich describes the principal districts within an Anbaugebiet, or regions where the wines are entitled to bear the designation "Qualitätswein" or "Qualitätswein mit Prädikat".
A soft, blue cow's milk cheese with a paste which, though it looks cracked, is smooth. It has a wrinkled, dark brown rind.
Bergamot. A herb of the mint family with finely toothed, dark gree, lemon-scented leaves can be added to salads, tisanes and fruit cups.
Lake trout. This is commonly a brown trout caught in a mountain lake.
A generic term for wheels of semihard to hard cheese made with cow’s milk similar to Emmental. They have a springy yellow paste with a few holes and dense, tough dry rind with traces of bloom or mould. They are made in the high mountains of Bavaria. These cheeses are made with whole milk and contain 45% fat (dry)/27% (total). The curds are cooked and pressed. They may weigh 20-50kg (44-110 lbs). There are countless numbers of these cheese, often bearing the words "alp" or "berg" as part of their name.
