A nickname for Puligny-Saint-Pierre, a cone-shaped, soft, fine-textured, moist goat’s milk cheese with a rind of natural mould and a complex flavour. It may have a coating of charcoal. (AOC).
Cheeses from the Pyrénées are finished with rinds to indicate the type of milk used. Those with a black rind are made with cow's milk while those with orange rind are sheep's milk.
A small version of Livarot, a flat, disc of cow's milk cheese with a red rind tied with grasses. It is soft, strong smelling, slightly holey and has a rich flavour. It is one of the older cheeses of Normandy.
