A simple sandwich of baguette sliced and spread with butter and then filled wiith jambon blanc (unsmoked ham). The archetypal Parisan snack.
Undercooked. Underdone. Not cooked enough.
Quenelle. Minced (US: ground) foods, generally fish or poultry until it has a mousse-like consistency, shaped, seasoned and poached in a light stock. Apparently derives from knödel, a dumpling.
