"Polar raspberries." Cloudberry. A relation of the raspberry but with an amber colour and which grows wild in northern regions of Europe and North America. Cloudberries are seldom cultivated. They have a smoky flavour and are excellent for making jams (US: jellies) and preserves. In Sweden they are used for making parfait.

Frangipane is made of a paste of ground almonds, butter, sugar, eggs, and liqueur. Flour and various other extracts, liquids, and differing proportions are used to achieve variations in texture and flavor. Generally, however, the ingredients in a basic recipe are at equal weights.
Ash. A tree which grows in temperate climes. The leaves of the European ash (Fraxinus excelsior) are used in France to make a fermented drink called frénette. When the keys are very young they can be pickled and used instead of capers.
