A variety of eating apple with red skin streaked with yellow and firm, sweet yellow flesh. It arose on a farm near York in Pennsylvania, belonging to Mr Johnson, in the early 19th Century. This late-season variety is harvested from October and is at is best from January to March.
A name for school prawns. Other prawns may be sold under the name of school prawns, in particular bay prawns and Endeavour prawns. However, they are most commonly Metapenaeus macleayi, which is translucent (looking grey when heaped up in the market) with green or brown speckling. They are usually around 8 cm (3") in total body length. They are fished in sandy bottoms near river mouths.
A full fat, semihard, blue-veined cheese made from cow's milk, resembling a blue Wensleydale. When young it is crumbly and flaky but aging softens it and brings out the flavour. This was a Gold Medal winner at the 1997 British Cheese Awards.

A coarse-cut pork sausage made with nutmeg, cayenne pepper and Wensleydale cheese. They can be fried, grilled or baked in the oven.
