Pike-perch or zander. It is a river fish with delicate flavour. They can be differentiated from the perch by the relatively large space between their dorsal fins and their elongate, fusiform body, which is never so steeply arched behind the head as it is in the Perch. The flesh is firm and white with a stronger flavour than cod. It was introduced into the United Kingdom in the 70's and is in danger of wiping out native species of fish.

A name for Clinton, a red variety of grape which arose spontaneously and was found in New York State in 1835. It is used in making red wines. It has the quality of being phylloxera resistant, leading to it being planted in the Italian Switzerland, Italy and Austria where it is used in Uhudler wines. It is now also grown in Brazil.
A rare breed of cattle with a truly distinctive flavour. Shetland cattle closely resemble the Jersey, Canadian and Breton breed in conformation but Shetlands are Scandinavian in origin. They remained pure until the mid-1800s when small numbers of Shorthorn, Angus and Highland cattle were introduced to the Shetland Islands. In the 1920s, Friesian cattle were imported which resulted in the existing coloration of the breed of black-and-white while historically dun and red-pied animals predominated. Originally these animals were a small, angular dairy breed with legendary longevity and resistance to diseases. Over time, and with the introduction of other breeds, they have increased in size.
