Stone's apple

A name for Loddington, a variety of cooking apple believed to have come from Bath to a farm in Loddington, near Maidstone in Kent, by a young relative of Mr Robert Stone (hence Stone's) around 1820. It was taken up by Mr Lewis Killick, hence yet another name for this apple (Killick's). It cooks to a purée so is good for sauces but also mellow to become a decent eating apple. This mid-season variety is harvested from late September in South-East England and is at its best from October to December.

Stone seaweed in Korea is roasted in sesame and corn oil. It is found on the southern shores of Korea. It is said to be “suitable for children particularly to stimulate better appetite". It is also found in Tamil Nadu where the black and cream seaweed, as in Korea, is dried before packing.

John Dory. A high quality, plump, flattish fish with a golden sheen, with an ugly but amiable face. It was first associated with Zeus, then with St Peter, as evidenced by the ‘finger marks’ left by him when he picked it up to remove a coin from its mouth to pay some taxes.

Tilapia. Mainly found in freshwater lakes and rivers, tilapia may also be found in estuaries and brackish water. They are found in quantities in Lake Victoria and are farmed throughout tropics. Perch-like or bream-like, with a slight muddiness about them.

St Pierre

Samphire or rock samphire (an anglicisation of herbe de Saint-Pierre), sea bean, sea pickle, sea asparagus, glasswort. High in protein, it is a salty fleshy, fibrous plant growing in coastal marshes and at the edges of tidal pools,  The texture is somewhat like that of asparagus, yielding but crisp.
