The arracacia root, Peruvian carrot or celery potato is a leguminous plant from South America, probably native to Colombia. Its name comes from the Arabic araq, meaning juice or sap. The most famous, Batavia Arrak, is made in Java and is aged for 7-10 years.
A drum of hard cheese made with cow's milk, this is a Dunlop-type cheese, similar to Cheddar. It has a moist, close-textured, slightly elastic paste and is rindless. It is made at Torrylin Creamery, Isle of Arran, Strathclyde. It may or may not be coloured. It is made with whole milk and the curds are pressed. It may be found in the following weighing 1 kg (2 lb 3 oz). This cheese tastes less harsh than Cheddar.
A blue cheese made with cow's milk at Home Farm, Brodick on the Isle of Arran. This cheese is at its best from March to October and is made with raw milk. It is made with vegetable rennet so is suitable for vegetarians. Affinage is usually 8 weeks.
Arran Pilot is a white-fleshed, white-skinned, medium-sized first early potato, with firm flesh. It is good in salads and is also suitable for chips (US: fries) and baking.
Arran Victory is an old variety of potato with rough, tough purple skin and sweet, very white flesh. This is a very floury potato which it is wise to cook in its skin. Very good steamed, mashed or baked. (1918).
