The arracacia root, Peruvian carrot or celery potato is a leguminous plant from South America, probably native to Colombia. The starchy, tuberous rhizomes are brown-skinned and cylindrical with off-white flesh. They can be cooked in the same way as potatoes or sweet potatoes, or used in desserts. They are often ground to produce a flour similar to cassava. They are used widely throughout South America.
